Presenting articulated and modern wines of the new Burgundy era, Camille & Guillaume Boillot are cultivating a strong collection of plots across Meursault, Puligny-Montrachet, and Pommard. Born from a determination to present their own version of Burgundy wine, this new venture began in the 2022 vintage.

The Boillot name is not unknown in Burgundy, and resonates between the villages of Pommard and Volnay, evoking a family tradition loving the vineyard for several generations. However, the adventure is just beginning for Domaine Camille & Guillaume Boillot. Starting with the 2022 vintage they have followed their desire to write their story, to stir heaven and especially earth in their own way, accompanied by a tribe of 4 children to whom they wish, without being obliged, to pass the legacy they have begun to build.

Guillaume skills were formed alongside his father, Henri Boillot, as a winemaker of the eponymous domain that he no longer represents. Guillaume's wife, Camille, represents the 5th generation of a wine-growing family, growing up in the soil and in the footsteps of her father, Christophe Violot-Guillemard, whose estate is located in Pommard. She now initiates the profession alongside her husband with modesty but also the determination of his character and the well-defined taste that his palace dictates: minerality, body but delicacy, precision, beautiful maturity and the rejection of any acidity.

Vines & Wine

• The vineyards are being run organically, with some trials in biodynamics, similar to that of the domaine previously worked at.

• The use of the vertical press is a key element to the way in which the couple differentiate themselves from neighbours.

• Starting out with just 2 Domaine wines (vineyards owned and grown by themselves), they look to expand their ownership of plots in the coming vintages. The Bourgogne Chardonnay and Puligny-Montrachet Enseigneres is their own plots, with the rest currently purchased grapes.
